High Fibre Chocolate Truffles

Place the desiccated coconut in a separate bowl and set to one side.

Put the remaining ingredients in a food processor and blend until well combined. The mixture should come together almost like a sticky dough. If it is dry, add an extra dash of coconut milk.

Spoon out the mixture and roll in your hands to create a ball.

Roll the ball in the coconut until well-coated, then place on a plate or in an airtight container

Once all the balls are rolled and coated, chill them in the fridge for at least 30 minutes before serving
